Sometimes the best party snacks are the simplest. This Lazy Girl Pesto Crostini came together in under 10 minutes and was a total crowd-pleaser.

I had the bread crisped earlier in the day, so when it came time to serve, all I had to do was top and plate. No fuss, no stress, and everyone loved them.

Lazy Girl Pesto Crostini

 

Ingredients:
  • 1 loaf Superseed Bread, sliced

  • Olive oil

  • Kosher salt

  • ½ cup pesto (store-bought or homemade)

  • Fresh mozzarella, sliced

  • Freshly cracked black pepper

  • Microgreens (or fresh basil) for garnish

 

Directions:
  1. Preheat oven to 350°F and line a baking sheet with parchment paper.

  2. Arrange Superseed slices on the sheet, drizzle with olive oil, and sprinkle lightly with kosher salt.

  3. Bake for about 25 minutes, until crisp and golden. Let cool completely.

  4. When ready to serve, spread each slice with pesto and top with mozzarella.

  5. Finish with cracked pepper, a pinch of kosher salt, and microgreens.

  6. Serve immediately and enjoy!
