Sweet Potato & Goat Cheese Crostini

Sweet Potato & Goat Cheese Crostini


Ingredients:

  • 1 loaf of Stylish Spoon Superseed Bread
  • Olive oil (for drizzling)
  • Sea salt (for sprinkling)
  • 1 cup mashed sweet potatoes (leftovers work great!)
  • 1/2 tsp goat cheese per piece
  • Pomegranate arils (seeds)
  • Fresh mint leaves (optional, especially for Christmas)

Instructions:

  1. Prep the Crostini:

    • Slice your Superseed Bread into about 18 slices.
    • Arrange the slices in a single layer on a sheet pan.
    • Drizzle or brush each slice with olive oil and sprinkle with sea salt.
    • Bake at 350°F for about 15 minutes, or until crisp around the edges. Let cool.
  2. Assemble:

    • Once the crostini has cooled, spread a generous tablespoon of mashed sweet potatoes on each slice. (If you’re using leftovers, about 1 cup will cover 18 slices!)
    • Top each piece with about 1/2 teaspoon of goat cheese.
    • Add a few pomegranate arils on top for a burst of sweetness and color.
    • For a festive touch, add a fresh mint leaf on top if you’re serving during the holidays.
  3. Serve and Enjoy!
