Pink lemons are a pretty alternative to traditional yellow lemons. The pink variegated eureka lemons available this time of year are one of my new favorites. The lemon peel is yellow with stripes of green and gold, the flesh is the color of pink cotton candy and the juice is clear. Like yellow lemons, they are tart and acidic, but they tend to be even more fragrant than yellow lemons. I love adding sliced citrus fruits to pitchers of water for entertaining. It adds a little color and interest to the water and most people appreciate the taste. Throwing some pink lemons into the mix is a refreshing treat, and it's an inexpensive way to serve a specialty fruit.
